Guy's Grilled Katfish
Large Katfish fillets cut in half
Melted butter (or olive oil) for basting
Sprinkle the fillets with small amount of lemon juice.
Sprinkle the fillets with a moderate amount of Guy's Seasoning.
Grill on a high heat 4 to 5 minutes on each side.
Baste fillets with a light coat of butter or oil while grilling.
Now...that's really good brain food!
Guy's Bar-B-Q Shrimp
Use LARGE Gulf Shrimp for best results.
Peel and de-vein the shrimp - leave the tail on the shrimp.
Cover the shrimp with olive oil.
Liberally sprinkle the shrimp with Guy's Seasoning.
Preheat your grill to high heat.
Put the shrimp on skewers and place on the grill for about 3-4 minutes on each side.
